I consulted Claude AI on how to brew Ethiopian beans. I've had a lot of bad coffee come from good beans in the past. There are a bunch of new things I learned that have helped me. This was one of the first Ethiopians I really liked.

Things to remember about Africans:

  • Higher heat. These do well between 210°-212°F. Just off boil
  • Grind around 20-22
  • Slow and low pour with little agitation
